Avocado Chocolate Mousse & Blueberry Ice Cream

Most people associate avocado with salads but they can be used for other things apart from salads. You can enjoy them as a snack (I’m known for eating mine like an apple!) and they are delicious for breakfast with poached or scrambled eggs and make you can make an awesome avocado chocolate mousse with them…..mmmmm.

I’m making these as individual avocado chocolate mousse pots as a healthy option for the New Year’s Eve party I’m going to and if I have time I’ll be making some blueberry and cashew ice cream too!

Avocado Chocolate Mousse – Serves 4

Ingredients:

1 large avocado

1/2 cup raw cacao powder

1 tsp vanilla essence

2 tbsp cold water

4 dates pitted or 1 medium banana

Add 1 tsp of mint essence or fresh mint if you want a minty avocado chocolate mousse. 

Method

Simply add to a blender, and blitz until everything is combined and you have a smooth mixture. Divide the mixture into a bowl, or individual bowls/shot glasses and chill in the fridge. 

This avocado chocolate mousse is super simple to make and tastes amazing.

Blueberry and Cashew Ice Cream

Ok, so this isn’t quite ice cream but it is an awesome substitute and much healthier!

Ingredients 

250g frozen blueberries

100g cashew nuts

drizzle of agave syrup or honey

100ml of almond milk

Method

Throw everything in a food processor and blitz until everything is smooth. Place in a container which is suitable for the freezer and freeze until solid.

This recipe is really nice with some fresh ginger added before you blitz together.
