These breakfast pancakes are amazing. With only two ingredients they are super simple and quick to make – you won’t quite believe they are only made from banana and eggs! They also make great snacks in addition to a healthy breakfast.  If you have a small family, we are sure these will go down a treat with the kids too…..well, let’s be honest, not just the kids in the household, the adults will love them just as much too! Just make sure you don’t add loads of maple syrup to them!

Ingredients – makes about 4 small pancakes

  • 1 medium banana
  • 1 egg
  • Small amount of butter

Extra ingredients

  • Chopped nuts
  • Berries
  • Protein powder

Method

  1. Grab your banana and mash it up. Try and get rid of all the big lumps. You should have about 1/3 to 1/2 a cup.
  2. Add the extra ingredients here if you want. These breakfast pancakes taste pretty yummy on their own but you can add extra if you want. For an good protein fix add 1/2 scoop chocolate protein powder to the mix.
  3. Whisk in the eggs until the yolk and whites are completely combined. The batter will be very loose and liquify and will look more like whisked eggs than regular pancake batter.
  4. You can use a blender to skip parts 1 – 3 and just whizz everything together in one go! 
  5. Warm up a small frying pan and add a little butter for cooking.
  6. Add two tablespoons of batter (or as big as you want your pancake to be!) into the pan, the mixture should sizzle a little
  7. Cook for 1 minute until the bottom is brown and golden.
  8. Flip the pancakes slowly and cook the opposite side.
  9. Cook until both sides are evenly cooked.
