vegetable curry and cauliflower rice

I was so excited to get home for my evening meal last night. I had made this vegetable curry recipe on Sunday night and let it simmer for ages so the flavours had really absorbed….after another 30 minutes simmering on the stove whilst I cooked the other bits to accompany it on Monday night, it was a taste sensation! (The picture does not do it justice!)

As I am a vegi, I made some tofu to go with mine for added protein – I had done a hard session on my turbo trainer last night so needed some extra protein for muscle recovery. I also baked some a chicken fillet in the oven for my non-vegi husband and whilst this was cooking made my cumin cauliflower rice.

So here is my Cumin Cauliflower Rice And Vegetable Curry Recipe if you want to give it a whirl at home.

Ingredients – Curry

I will be honest, I never measure anything, especially when it comes to spices so these are a guide…..experiment with the flavours until it is as hot and spicy as you like.

1 tsp of coconut oil

1 tsp mustard seeds.

1 tsp of following spices – turmeric, garam masala, paprika, cumin

1 garlic clove, finely chopped/crushed

1 knob ginger, grated

1/2 red chilli finely chopped

1 red onion, diced

1 green pepper, sliced

1 small courgette, sliced

1/2 tin chick peas

200g spinach

400g tin of chopped tomatoes

Ingredients – Cumin Cauliflower Rice

Small head of cauliflower

Handful of mushrooms, sliced

1tsp coconut oil

1 garlic clove, finely diced/crushed

1-2tsp ground cumin

How to…Curry

  • Melt the coconut oil in a pan.
  • Add the garlic, ginger and onions and cook for around 2-3 minutes until soft.
  • Add all of the spices, chilli and a splash of water until it makes a paste.
  • Add the pepper and courgette and cook until soft.
  • Add the chopped tomatoes, chick peas and spinach
  • Simmer for as long as you have time to really release the flavours!
  • Keep tasting and adding more spice as needed.

How to….Cumin Cauliflower Rice

  • Either grate the cauliflower or blitz in a food processor
  • Melt the coconut oil in a pan
  • Add the garlic and cook until soft
  • Add the mushrooms and cauliflower and gently heat until cook.
  • As the cauliflower rice is cooking, add the cumin (to your taste) and stir through.
