Ieuan’s Healthier Breakfast Cups

Are you someone who loves a good, but naughty, cooked breakfast? Do you struggle to leave the bacon, eggs, and beans alone? Then these delicious breakfast cups allow you to semi-indulge whilst keeping it under control and healthier. These breakfast cups are also perfect for those who are on the go and struggle to sit and eat a meal.

Ingredients & Equipment (makes approx 4 cups):

  • low-calorie spray oil,
  • 8 rashers of bacon,
  • 4 eggs,
  • 4 tbsp baked beans,
  • 4 chopped mushrooms,
  • salt & pepper.
  • 1 muffin tin

Breakfast Cups

Cooking Instructions:

  • Pre-heat oven to 180-200°C,
  • Spray your muffin tin,
  • Lay 2 rashers in each muffin “slot”, cut and lay the bacon to ensure the whole “slot” is covered fully with no gaps,
  • Place bacon into oven until cooked to pink,
  • Take bacon out and spoon in 1 stirred egg, 1 tbspn beans, 1 chopped mushroom, and a crack of salt and pepper,
  • Place back into the oven for 12-15 minutes or until egg is cooked through.

These very simple breakfast cups only take approximately 30 minutes to make and will be perfect on the go or indulgent breakfast options. Additionally, simply removed the bacon to make this a great vegetarian friendly breakfast. Get your fill of your “greasy spoon special” without the unhealthyness. These are a perfect protein boost to supplement any morning of heavy training.
