healthy raspberry recipes

We have been eating raspberries for the last two weeks in my house – and yet more and more fruit is ripening. I’ve eaten them raw and I’ve added them to my porridge – but what else can you do with them? Obviously I could freeze them, but then I’m still going to have to do something with them once defrosted! I could add them to my healthy rhubarb crumble (as we still have an abundance of Rhubarb too)…but there’s only so much crumble two individuals can eat! The problem is that when I search for recipes containing raspberries 99.9% of them are cakes or jams – no no no no no no no!!! So I have visited every food site, every blog, and even tried to make up some healthy raspberry recipes for you guys to give a go:

  • For a warm day! Chia Strawberry, And Raspberry Mint Popsicles (my favourite)

My inspiration for this came from the following website: http://www.eatgood4life.com/chia-strawberry-and-raspberry-mint-popsicles-a-giveaway/ The only difference is that I have reduced the amount of strawberries (I don’t grow them!!) and increased the amount of raspberries. I also don’t add maple syrup – infact I haven’t added any sweetener because they taste fine without it! If I was going to add some sweetener, I’d add agave.

  •  Salads! Raspberry, Goat Cheese, and Basil Quinoa Salad & Spicy Raspberry Balsamic Chicken With Orange-Broccoli Red Quinoa

Firstly – I should make it clear that I have not tried these, but they sound nice and they are super healthy! And no, it’s not because I’m vegan and these involve cheese and chicken – if I wanted to try the salads, I would just substitute ingredients. It’s because I’m not a “fruit with salad” kind of person.  Here are your links:
