Ieuan’s Homemade Salt & Pepper Chicken

Are you a fan of that odd cheeky Chinese takeaway? Do you love the salt and peppery goodness that Salt and Pepper Chicken brings? Look no further for your own, homemade, healthier version. This recipe is really easy to prepare and make, and it tastes delicious. You can also mix this dish up. If you are vegetarian or vegan you can swap the chicken for any appropriate alternative; tofu, chunky vegetables, or anything that takes your fancy. Why not experiment? All you will need is the following:

Ingredients (serves 2):

  • 2 chicken breasts or use thighs,
  • 2 small/medium onions,
  • 3 spring onions,
  • 3 whole chillies (I used red),
  • handful of cashew nuts (optional)
  • chilli powder (as much as you like! – I used a tablespoon),
  • teaspoon of garlic powder,
  • a few turns of salt shaker (taste regularly and add more for desired flavour – NOT TOO MUCH!!),
  • a few turns of black pepper (as above),
  • 1 teaspoon sugar,
  • handful of sesame seeds,
  • half a mug of chicken stock.

Once you have bought all your ingredients the recipe could not be simpler all you need to do is the following:

Method:

  • Place the chicken in the oven at 180-200 degrees C depending on oven performance for 20-30 minutes until cooked through,

Whilst chicken is cooking…

  • Chop onions into small chunks and add to a medium saucepan on a medium heat,
  • Chop and add in the chillies,
  • Add chilli powder, garlic powder, salt, pepper, and sugar,
  • Heat through until onions are softened and then turn to low heat,
  • Just before chicken is ready add the chicken stock, stir through, and reduce stock,
  • Add sesame seeds, cashew nuts, and spring onions,
  • Once the chicken is cooked add it to the saucepan and mix in until all chicken is coated in the salt and pepper mix,
  • This is best left for 5 minutes in the mix to allow flavour to soak into the chicken.

Serve up either on its own for low-carbohydrate option or serve with a brown or basmati rice.
