Each year I like to make people jealous by writing about the amazing food I’m going to be making for my vegan Christmas. I also hope that it gives some people inspiration for what to cook for any vegetarian or vegan family members or friends. This year I’m going off script, I fancy something different and got a great idea based on my sprout dish! For the last couple of years, I have stir fried my sprouts with garlic and chilli…but not this year…..this year we’re having : SPROUT PAKORAS!!!

Yep, I’ve decided it’s Christmas Curry time – BOOM! So here’s my menu (and some recipes to boot).

  • Sprout Pakoras  – I’m going to make these with gram flour and coconut yoghurt. I add cumin seeds, mustard seeds and lots of fresh coriander. I cook them in the oven and then usually finish them under the grill. I’m thinking of serving them with some kind of spiced cranberry chutney – well it is Christmas after all!
  • Christmas Curry – we can’t have pakoras and not have curry. I’ve turned to my trusty friend Jamie Oliver for this one.   • As I haven’t decided on which curry (to be honest, I may make both), I haven’t decided what I’m going to serve with it. I may Christmas-spice up some rice, or just simply serve it with traditional Christmas roast veg (just not sprouts).
  • Rhubarb and Rose Water Sorbet – here’s the truth, I’m not a massive pudding fan – I’m more a savoury person. But, when we had an abundance of rhubarb this year, I made some sorbet – and it’s currently a frozen solid block in the freezer. But what about all that sugar I hear you say – AHA! And there you have it. I’ll be posting pictures of the feast to Instagram and I’m going to have a test run of my vegan Christmas very soon so if anyone wants a sprout pakora let me know.
