This is a fresh twist to an old classic, also a great way to get the enjoyment out of a comfort food, but without all the naughtiness. Here is our No Carb Spaghetti Bolognese Recipe…..mmmmm! Ok, so it’s not completely carb free – the courgetti and other veg add some carbs, but it’s free of processed spaghetti which can often leave you feeling bloated.

It’s so easy to make, quick to prepare (15 minutes) and tasty to eat.

The following recipe serves 4 people – if you do not have 3 other people to feed it is always a good idea to cook in bulk and store (refrigerate/freeze) some for later in the week or month.

The only element that make this dish a tad tricky, is spiralising the courgettes, but this is also most enjoyable part so please give it a whirl.

Ingredients

500g turkey mince

Onion

Garlics clove

1 carrot

150g of mushrooms (optional but if you love mushrooms like me essential)

2 cans of chopped tomatoes

4 courgettes

1 tsp chilli flakes (optional)

Method

  1. Fry the mince until cooked all the way through. Add the onion and garlic to the mince.
  2. Throw in the mushrooms and carrots, cook for only 3 minutes. The mushrooms will shrink in size dramatically. Give it all a quick stir to make sure it is all equally cooked.
  3. Pour in the chopped tomatoes and again stir in thoroughly.
  4. Now for the fun bit…You get to spiralise your courgettes. A spiraliser costs anything from £10+ buy, once you have tried this meal once I am sure you’ll agree it is a worthwhile investment.
  5. Place the courgettes into a frying pan for 2-3 minutes and there you have it, all parts of the prep are ready to serve.
  6. Just like you would with standard spaghetti, add your courgette to a plate/bowl and pile the bolognese sauce on top.
