A few weeks ago I wrote a blog all about beans, comparing nutritional values of our favourite beans. Now, it seems only appropriate that I should give you a bean recipe to enjoy. And these creamy pesto butter beans is just the one to get your taste-buds going.

Ingredients:

Pesto:

  • Garlic clove x 1
  • Pine Nuts x 50g
  • Fresh basil x 1 handful/25g
  • Olive oil x 3 Tbs
  • Juice of one lemon
  • Salt and pepper

Salad:

  • Butter beans x 1 400g can drained
  • Spinach x 100 g
  • Olive oil
  • Juice of one lemon
  • Pumpkin seeds x 1 handful
  • Pomegranate seeds x 30g

Method:

  • Make the pesto by first peeling garlic and then blending all the ingredients into a paste.
  • In a pan, heat the oil and add the beans, spinach and pesto. Heat through for 2-3 minutes until the spinach has wilted and everything is warm.
  • Remove from the pan and in a bowl add the squeezed lemon, pomegranate and pumpkin seeds and shake to mix.
  • Serve as a single dish or as a delicious side.

This dish is super quick and easy and will no doubt be added to your “go-to” recipes when you are short on time. Healthy, delicious and comforting.  And don’t forget it for your summer barbecues to wow your friends with.

Enjoy.
