We all like a sweet treat without the calories right? So, it was no surprise that when Quest Bars came on the scene, that they were flying off the shelves due to their high protein, low sugar content but somehow still resulting in great tasting bars.

How would you like to make your own version of these but as a cookie instead? Well today I have the secret with my peanut butter cookies!

In these Peanut Butter Cookies, the secret ingredient is Vitafiber which is a Isomaltoligosacharide (a low calorie sweetener that is a carbohydrate but acts as a fiber) and when combined with protein powder can make an awesome Quest-styled bar for a fraction of the price and calories.

But you didn’t come here for bars… you came for cookies!

These peanut butter cookies are pretty simple to make.

Ingredients

  • 1 scoop (30g) of chocolate protein powder
  • 30g Vitafiber
  • 1/2 tablespoon of Organic Peanut Butter
  • 25-75ml Milk

Cooking Instructions

  1. Preheat the oven at 180 degrees
  2. Combine the milk, protein powder and vitafiber in a mixing bowl thoroughly until you have a smooth consistency
  3. Place  half the mixed ingredients on a small baking try in 4 mounds
  4. Place a small amount of your peanut butter filling on top of each mound
  5. Place the remainder of your mixture on top of each mound
  6. Pop in the oven for 6-10mins
  7. Remove, cool and enjoy
