Ok, I’m going to be honest…..I didn’t do my weekly shop at the weekend. Yikes! What does that mean for my food for the next couple of days?!? Well, my cupboards contain a vast assortment of dried lentils, chana dal, quinoa, country soup mix, herbs and spices, and I reckon I have the odd stock cube, onion and garlic bulb lying around…..I’m sure I can knock something up with those. Oh hold on……and here’s something I’ve never looked at in earnest before…….there are recipes on these packets. These packs which are sold proudly as wholefoods have wholefood recipes on them! How handy.

You’ve probably looked at these and then ignored them, but actually, when you don’t have a lot of fresh food in the house and you’ve run out of ideas – these are perfect. To save you having to go out and buy these lentils and country soup mixes, or to inspire you to go through your cupboards and look at what wonders your packets hold…I thought I’d share some of the recipes with you, because actually, they are really straight forward! Also remember – recipes are just a guide, you can always just wack in other ingredients or miss one out if you don’t have it!

Chana Dal Soup – you literally just need chana dal, a spice rack, some garlic and a little oil! Cook the Dal for 30-40 minute until tender and then follow the instructions on the packet – EASY!

Thick Farmhouse Soup – find an onion, a dodgy looking carrot or two and you’re good to go with this one.

Quinoa with Cherry Tomatoes and Pinenuts – grab a handful of cherry tomatoes and a lonely looking red onion to make a great lunch for the next day!

So what are you waiting for – get in those cupboards and look! I also found the recipe for Lentil Shepherd’s Pie…..guess what’s for tea tonight!!!
