BBQ Prawn And Chicken Skewers

As you know this weekend was roasting and, hopefully, we are due to have a few more like it. When it is hot there is nothing better than firing up the BBQ! BBQ food can be not only be healthy but also very tasty – it’s just about adding variety and flavours.

This weekend I made BBQ prawn and chicken skewers – one batch were chilli and garlic and the other were garlic and herb skewers.

  • Ingredients:
  • 20 King Prawns
  • 2 chicken breasts cut into chunks
  • garlic cloves x 3
  • mixed herbs (generous shake)
  • 1tsp olive oil
  • twist of pepper
  • chilli to taste
  • button mushrooms
  • 1x red pepper cubed
  • 1 x yellow pepper cubed
  • 2 x red onion cubed
  • cherry tomatoes

Method

  1. Add the chilli, garlic herbs, oil and pepper to a bowl and chop finely! Mix together, add the prawns and chicken and leave to marinate. (I left mine 2 hours but can be shorter/longer depending on time available)
  2. Chop all the vegetables except the mushrooms into chunks and using a skewer alternate between prawn or chicken, mushroom, pepper, onion and tomato.
  3. Place on the BBQ rotating until the chicken and prawns are cooked and the vegetables are soft.

Let’s hope we have some more sunny weather on the way so you can enjoy these BBQ prawn and chicken skewers. If it isn’t warm enough then you can always make them under the grill indoors!
