Healthy BBQ Meals – BBQ Thai Prawns

The sun is out and that can only mean one thing….it’s BBQ season! Many people associate BBQ’s with unhealthy food but if you make your own burgers with lean mince or chicken skewers and serve them with salad and roasted vegetables then you can make some really healthy BBQ meals.

So here is hoping that the fantastic weather continues so we can get the BBQ out and cook some healthy BBQ meals and enjoy the sunshine!

To get you started here is a recipe for BBQ Thai Prawns, something a little different from the normal homemade burgers and chicken skewers. They are simple to make and incredibly tasty and yummy too! Enjoy!

Serves 4

  • Ingredients 
  • 600g jumbo king prawns
  • 4 lemongrass stems bruised
  • For the Marinade 
  • 1tsp olive oil
  • 1 large red chilli deseeded and finely chopped
  • 2tsp of soy sauce
  • 2 garlic cloves, crushed
  • 2tsp grated ginger
  • 1tsp ground cumin

Method 

Add all the marinade ingredients together and cover the prawns, leave for 5 minutes.

To cook on a BBQ then add to metal skewers and place in the middle of the BBQ on the lemongrass  and cook for 2-3 minutes turning once until the prawns are opaque.

Remove the lemon grass and serve with a nice salad or roasted vegetables.
