Summer is here…. well there is the odd good day, so that means Summer is here! Here is a nice cheeky little tasty marinade that can give your BBQ chicken a new lease of life. Creating flavour in natural food isn’t complex, and tastes far superior to machine produced food like substance. Prep this the night before and apply to your chicken in a sealed bag overnight. If you remember, turning the bag once of twice before night will help distribute the amazing flavours.

The Benefits of Extra Virgin Olive Oil

Ingredients:

  • 100 ml of high quality olive oil
  • 1/2 teaspoon of black pepper.
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon of chilli flakes
  • 1/2 finely chopped onion
  • 2 cloves garlic crushed
  • Large handful of finely chopped parsley
  • 1 whole lime, squeezed
  • 100ml of ginger beer
  • Small pinch of salt

Once you have gathered all of the lovely ingredients, get them mixed up together gently with a fork. Place the mix with your chicken in a zip sealed bag, if possible try to remove as much air as possible in the bag The longer you can leave the chicken soaking up these flavour the better. You should be able to get around 750g of chicken (breast or thigh) covered with this amount.
