Do you struggle with getting breakfast in? Always on the go and need something you can grab from the fridge and eat on the move, or take to work? It is not often you will see a health and fitness blog encouraging muffins into your diet. These egg muffins, however, are packed with protein, good fats, and plenty of you needed nutrients, all whilst being low carb.  These egg muffins are a perfect breakfast option, and can even make great snacks for you to keep hunger at bay during a hard day at work.

Grab your pen and paper and get these on your shopping list. All you need to make these healthy muffins are the following:

  • 3-4 eggs
  • mushrooms
  • onion
  • lean bacon/ham
  • peppers

To make these tasty treats you won’t even have the excuse of time on your side. They are very easy to prepare and cook. Do them in the morning, or precook them the night before and simply grab them from the fridge and you are away. The process is as follows:

  1. Crack your eggs into a bowl and whisk together with a fork
  2. Precook your bacon in the grill for a few minutes
  3. Chop and add your bacon, mushrooms, peppers, and onion to the egg mix and further whisk together
  4. Evenly pour your egg mix into muffin trays and place in the oven at 180-200 degrees depending upon your oven until risen and cooked through.

These egg muffins are a perfect option on their own or can be a great addition to your lunch or evening meal. You can also vary your muffing fillings, play around with various vegetables or meats. Box them up and enjoy them wherever you are. Who said muffins were unhealthy?
