Personally I’ve always found breakfast to be the trickiest meal of the day. I’ve got limited time. I’m usually in a rush and I’m often up so early for work that my hand-eye co-ordination isn’t exactly at Masterchef levels. On top of all that, I’m looking to get a healthy, protein-rich meal in without just resorting to a lazy bowl of cereal or a slice of toast.  Here’s a sneaky little recipe I’ve found that’s super easy to make and pretty tasty too. I’m calling them Alex’s Breakfast Burritos!

 

Ingredients:

2 Tortillas

6 Eggs

1 Dash of Milk

2 Handfuls Spinach

2 Tablespoons Salsa (I prefer the spicy version!)

Pinch of Salt and pepper

 

Method:

  1. Mix your eggs and milk in a jug, then add your salt and pepper to taste.
  2. Add your egg mixture to a pan and heat gently for 3-5 minutes, stirring frequently so it doesn’t burn or stick to the bottom.
  3. When your scrambled eggs are nearly done pop your tortillas in the microwave and heat for about 10-20 seconds (yes you could theoretically make your own tortillas and oven cook them, but I’m guessing you don’t have hours to spend cooking every morning).
  4. Add your scrambled eggs to your tortillas, along with the salsa and spinach.
  5. Wrap them up and enjoy.

 

And there you go! A quick and tasty high protein breakfast recipe that you can cook and serve in less than 7 minutes.  Pro-tip from my own experience, don’t get too distracted by the TV and end up wasting all the time you saved with the quick recipe!  Also, if you’re looking for more breakfast ideas, why not try these healthy breakfast ideas.
