Back in April I posted a picture of these tasty and spicy cauliflower bites on our Instagram, but just in case you missed it, here it is the recipe for you in full detail! The brilliant thing about cauliflower is that it’s easy to cook and quick, it takes on flavours well, AND if that wasn’t enough it’s low carb, and a source of vitamin C, K, B6 and loads of other micro-nutrients!

I got the idea for these spicy cauliflower bites one Sunday when I was starving and was hungrily searching the fridge, the freezer and any cupboards for a healthy snack. They are GREAT SNACKS when the florets are still warm. They are also a great addition to a salad when they’re cool – as you can see from the picture above (shown here with spinach, quinoa and mixed beans, beetroot and a bit of lemon juice).

The beauty of this spicy cauliflower bites recipe is that in theory, you can use any spices or seeds or herbs – I’m going to try fennel and cinnamon next time! I also purposely roast too many of the spices as I then ground half of them to make a curry, and use the others to put in salads to spice them up a bit.

Ingredients

  • 1 x Cauliflower
  • 1tsp oil
  • 1/2 tsp dried chillis
  • 1tbs cumin seeds
  • 1 tbs mustard seeds

How To…..

Preheat the oven to 220. Break the cauliflower into florets and place onto a baking tray. Drizzle with the oil and scatter the seeds. Get your hands dirty and rub everything into each other – making sure you get plenty of seeds on each floret. Roast at 200 for 25 minutes, stirring half way to doubly coat everything.

Easy! These spicy cauliflower bites are great hot or cold as above but be aware that they don’t keep for very long in the fridge as cooked cauliflower can go a little soggy.
