We get a weekly fruit box delivered at Motive8 and wow – we have SO many pears right now! And it is those pears that I used as inspiration for today’s food blog. This is such a straight forward recipe, and tastes great whether it’s served hot or cold. Here is my version of a pear and walnut salad.

Ingredients

  • 4 Pears
  • Salt & freshly ground pepper
  • 1 Tablespoon olive oil (or coconut oil) plus 2 teaspoons walnut oil
  • ½ Cup unsalted, roasted walnuts
  • Handful of rocket

Method

Quarter and remove the seeds from the pears. Season the pears with salt and pepper and cook in a frying pan with the tablespoon of olive oil. Turn occasionally until they go golden brown and start to soften. Transfer to a plate.

Toss the walnuts with the 2 tsp. of walnut oil in a small bowl; season with salt. On a fresh plate, place the rocket, then the pears and scatter the walnuts on top. Simple!

 

Of course, I’ve only called at salad because of the rocket! This would also make a great pudding – sorry “dessert” too! I’m actually saving some to have with yogurt for breakfast. For other breakfast ideas, click here.
