So this week’s food blog is a different version of the family favourite: Spaghetti Bolognese. I’ve replaced beef with turkey mince and served it with seasoned sweet potato slices as a natural carbohydrate source rather than spaghetti. Why would you swap out lean beef mince I hear you cry? If simply having a change isn’t enough, how’s the fact that per 100g of raw Turkey Breast Mince, there are less calories, less fat (including saturated fat) and more Protein than lean beef steak mince! True story! Best of all, this Turkey Bolognese is easy to make and is great for batch cooking.

Ingredients:

400g turkey mince
1-2 diced onions
2 diced cloves garlic
1-2 tbls tomato puree
1 tin of chopped tomatoes/ passata
2 sprigs of rosemary
1-2 tsp oregano
Salt and pepper (optional, but recommended)
1 stock pot – chicken or onion works well
Worchester sauce
Balsamic vinegar
Chopped basil to garnish
2-3 sweet potatoes cut into thin circular slices

For the Bolognese:

1. Start by heating some oil in the pan then add the turkey mince, cook until all the mince has changed before adding the onions and garlic.
2. Once the onions have browned, add the tomato puree and stir through till it’s coated everything in the pan.
3. After that add the chopped tomatoes, rosemary, oregano then season with salt and pepper to taste.
4. Add the stock pot, a few splashes of Worchester sauce and balsamic vinegar then allow to simmer on a low heat for about 10 minutes.
5. Once everything has been plated up, finely chop a few leaves of basil and sprinkle on top to garnish.

For the Sweet Potato Slices:

1. After slicing the sweet potatoes into circles, par boil them for around 5 minutes.
2. Drain them off then place onto an oiled baking tray, drizzle with extra virgin oil then season with salt pepper, mix them so all the slices are coated with the oil and seasoning.
3. Bake in the oven 180-200C for 10 minutes on each side or until slightly crispy.

 

If you want a lighter accompaniment rather than potato, you could serve this with courgetti or other spiralised veg.
